Hi everyone,
I hope you had a great week! My mom was just in town for three days. Doug was away for work, and since I don’t love being alone (or just really prefer company!), it worked out perfectly that she could visit.
As you probably know, I learned to cook from my mom, and she’s such a big part of my life. We’re super close and she almost feels like a sister. She’s got this fun, youthful energy, whereas I’m more of an old soul. People often ask if we’ve always been this close, and the answer is definitely yes. She’s always been my biggest supporter and is also one of the funniest people I know—she’s the only person who makes me feel like a wallflower!
Below is a little recap of her jam-packed trip to LA: everything we cooked, where we ate out (including our favorite ice cream flavor lol), and a really sweet moment from her visit.
First, here’s a recipe for a healthy chicken stir fry. It’s one of my favorite ways to pack in tons of veggies in a flavorful, delicious way.

Healthy Chicken Stir Fry
Sub in whatever veggies you have on hand, making sure to add the heartiest ones first so everything is perfectly cooked at the end. Mix the sauce beforehand for stress-free cooking.

Crispy Rice Paper Pancakes
My mom and I came up with this creation, and we were floored by how delicious it is. It’s similar to a Korean vegetable pancake. We hope you love it!
In-N-Out Burger Bowl
This is everything you love about In-N-Out but in burger bowl form. The dressing is inspired by their secret sauce. It’s so satisfying and delicious.
Cacio e Pepe Mac & Cheese
The flavors of cacio e pepe with a mac & cheese preparation. The al dente noodles pool up with the creamiest, cheesy sauce.
Three Days with Mom
My mom lives in Northern California and I’m in LA, so it’s just a quick hour-long flight. She usually comes down once a month for three days, landing super early on a Wednesday and flying back Saturday morning. (She also has a full-time job as a real estate agent and is totally crushing it.)
Before each visit, we usually brainstorm what recipes we want to cook, but this time we were both so busy we barely had a chance to talk beforehand. I joked that we were building the plane as we flew it—just figuring things out on the go. One thing that never changes is we make a plan first thing in the morning, and then she heads to the grocery store while I do my workout and morning routine. (She’s the best!)
