Hope you had a great week! My book tour officially wrapped up this week in Texas, and along the way I had so many wonderful conversations. One question kept coming up again and again: how did I first start cooking, and what led me to launch a blog on Instagram? It made me realize I’ve never really shared the full story here, so I thought it would be fun to give you a little overview in today’s newsletter.
First, here’s a recipe for a healthy carrot ginger soup my mom and I have been making for years. It’s made with just a few ingredients (carrots, onion, and lots of fresh ginger) and has such a smooth, creamy texture. Served with a dollop of sour cream and a sprinkle of fresh chives, it’s so delicious.

Healthy Carrot Ginger Soup
My mom and I have been making this soup for years! It’s shockingly creamy and luxurious, though it’s made with just a few simple, healthy ingredients.

Crispy Rice Paper Pancakes
My mom and I came up with this creation, and we were floored by how delicious it is. It’s similar to a Korean vegetable pancake. We hope you love it!
Lemon Ricotta Pancakes with Lemony Whipped Cream
These taste like a lemon cake, but lighter and fluffier. They’re made with ricotta for added depth and richness, and come together with lemony whipped cream on top.
My Story: How I Got into Cooking
I’ve always loved food. As a kid, I was a bit overweight because I loved to eat so much. I was never picky and honestly can’t think of a food I didn’t enjoy. I always joke that I learned to fold a wonton before I ever held hands with a boy, which is actually true. I learned so young that I can’t even remember a time when I didn’t know how to fold them.
