I'm definitely not a professional sushi chef 😅 but this was so fun! The sushi rice turned out absolutely perfect and I loved the tuna, cucumber and avo combo. I hope you enjoy! Feel free to sub in whichever fillings are your favorites!

Instructions
- Wash the rice 2-3 times until water runs clear and then cook according to package directions.
- While rice is cooking, combine the vinegar, sugar and salt in a small saucepan and bring to a boil over medium heat; whisk until all sugar is dissolved and then set aside to let cool.
- Once the rice is done, spread it out in one layer in a large bowl and drizzle with the vinegar mixture (while the rice is still hot); fold the vinegar into the rice while fanning it so that it gets shiny and does not get mushy; keep the rice covered with a damp towel until ready to use.
- Cut a nori sheet down to the right size (we cut 1/3 off) and place shiny side down on a bamboo sushi mat; wet your fingers and spread the sushi rice evenly onto nori sheet.
- Place the cucumber, avocado and tuna towards the bottom of the nori sheet and then roll into a cylinder with the bamboo sushi mat.
- With a very sharp knife, cut each roll in half and then cut each half into 3 pieces - enjoy with soy sauce and wasabi!
Notes:
Vegetarian Modification: Leave out the tuna and add in whichever veggies are your favorites
