Balsamic pork chops with onions, mushrooms, garlic and thyme ๐ŸŒฟโœจ These were so delicious! I can't wait to make them again ๐Ÿ˜Š๐Ÿ’•

  1. Take the pork chops out of the fridge 30 minutes before cooking and tenderize gently with a meat mallet (you don't want to make them thin); sprinkle generously with salt and pepper and let rest ~25 mins unrefrigerated until ready to cook.
  2. Preheat a pan over medium high heat, add 2 tsp of avocado oil and then sear the pork chops for 3-4 minutes per side until browned; remove from the pan and cover with foil.
  3. Turn down the heat to medium and add 2 more tsp avocado oil to the same pan (don't clean it!); add the onions and mushrooms; cook ~5 minutes until tender and then add the garlic and thyme; cook 1-2 mins.
  4. Add the balsamic vinegar and the beef broth and turn heat up to medium high; cook 1-2 minutes so the liquid begins to reduce.
  5. Add the pork chops and cook for 5-10 more minutes until internal temp reads 145ยฐF and sauce has reduced.
  6. Serve pork chops with the saucy onions and mushrooms on top; garnish with a sprig of thyme and enjoy!

Notes:

๐ŸŒฑVegan Modification: Sub in firm tofu for pork (squeeze as much water as possible out) and vegetable broth for beef broth
