Cookie Dough Bites

These vegan, grain free cookie dough bites are amazing! I make a big batch and then store them in the freezer so I have some healthy sweet treats on deck when that sugar craving hits.
Ingredients
Instructions
- Line a loaf pan (or any rectangular dish) with parchment paper.
- Mix together the almond flour, cashew butter, coconut oil, vanilla, salt, coconut sugar, almond milk and 1/4 cup of the chocolate chips; form into balls and refrigerate for 15 minutes.
- Melt 1/2 cup of chocolate chips in the microwave in 30 second increments (stir in between, mine only took 1.5 mins total) and dip the cookie dough balls in the melted chocolate.
- Place on a baking sheet lined with parchment paper and refrigerate for at least 20 minutes or until the chocolate has hardened.
- Take out of the fridge and enjoy! Store in the fridge or freezer.
