These vegan, grain free cookie dough bites are amazing! I make a big batch and then store them in the freezer so I have some healthy sweet treats on deck when that sugar craving hits.

Ingredients

  1. Line a loaf pan (or any rectangular dish) with parchment paper.
  2. Mix together the almond flour, cashew butter, coconut oil, vanilla, salt, coconut sugar, almond milk and 1/4 cup of the chocolate chips; form into balls and refrigerate for 15 minutes.
  3. Melt 1/2 cup of chocolate chips in the microwave in 30 second increments (stir in between, mine only took 1.5 mins total) and dip the cookie dough balls in the melted chocolate.
  4. Place on a baking sheet lined with parchment paper and refrigerate for at least 20 minutes or until the chocolate has hardened.
  5. Take out of the fridge and enjoy! Store in the fridge or freezer.
