My Weeknight Dinner Rotation & What I Cooked Last Week
My Five Go-To Weeknight Dishes, Mom’s Creamy Veggie Lasagna, Healthy Shrimp Spring Rolls.
Hi everyone,
I hope you’re doing well! It’s been a whirlwind week—I wrapped up my cookbook shoot last Saturday and Doug and I are flying to Tokyo in a few days. We’re so excited for our trip! Please send restaurant recs if you have them :)
Below, I’m sharing five go-to dishes I’ve been making on repeat for years. I think of these as my dinner rotation (more on that below). I know the recipes by heart—they’re so simple I could almost make them in my sleep. Each one is easy, delicious, and packed with flavor.
First, here’s a recipe for a creamy veggie lasagna. When I was first learning how to cook, I remember telling my mom that making lasagna felt intimidating. She walked me through it step by step, and now it’s one of my favorite things to cook. I hope you’ll make her recipe and see how easy and delicious it is!

Mom’s Creamy Veggie Lasagna
This is my mom’s special white lasagna made with tons of nourishing green veggies and whole milk, for a creamy yet light sauce.

Healthy Shrimp Spring Rolls
I will never get sick of my mom’s shrimp spring rolls. Filled with colorful crunchy veggies and served with a homemade peanut sauce, they’re bright, refreshing, and satisfying.

Back when I was working a full-time corporate job and just cooking for Doug and myself, I had a specific lineup of meals I made on repeat. These were the dishes I felt totally comfortable making—and, more importantly, genuinely loved eating. I made them so often that I started calling them my “dinner rotation.”
I know eating the same thing over and over might sound a bit boring, but there’s something comforting (and practical) about having a few go-to meals. Nothing pains me more than hearing someone say cooking feels like just another chore, like laundry. I truly believe anyone can learn to enjoy the process and even find it relaxing. And the first step is having a few recipes in your back pocket that you know inside and out—meals you feel confident making and love eating. Once you have those, cooking can become more fun and nourishing (like self care!), and less stressful.
So, here are the five dishes that have been part of my weekly dinner rotation for years and years:
