Hi everyone,
Hope you had a great week! Doug and I have been loving being back in LA and settling into our routine, which mostly consists of morning matchas, evening walks with the dog, and yoga and tacos on the weekends.
Being back on a routine has also meant cooking some of my go-to dishes again. Below, I’m sharing more about the one easy, healthy recipe that’s been in my dinner rotation for years. It’s the one I always turn to when I don’t really feel like cooking but still want something satisfying and healthy.
First, here’s a recipe for creamy chicken and dumplings. It’s such a cozy soup that feels like a hug in a bowl. I hope you give it a try!
As always, my cookbook Maxi’s Kitchen is now available for purchase at your local bookstore or online:
Thank you so much for your support 🤍
What I Cooked Last Week! ↓
Creamy Chicken and Dumplings
Cozy comfort in a bowl! The soup is rich and creamy, and so delicious with tender chicken, veggies, and homemade dumplings.
You can download the PDF recipe above and watch the video here :)
Chicken Pad Thai
This restaurant-quality pad thai is savory, sweet, and tangy, with chicken, tofu, peanuts, and bean sprouts. Soaking the noodles instead of boiling them gives them that bouncy texture.
Roasted Tomato Soup
The secret to the best tomato soup is roasting the tomatoes and aromatics in the oven until they’re sweet and jammy. Blend with some milk for a creamy finish.
The Recipe I Always Come Back To ✨
When I want something super easy and healthy, there’s one dinner I make over and over again.
