Ask Me Anything & What I Cooked Last Week
AMA (my favorite recipe ever, workout routine, cookbook, and more!), Mom’s Potato Salad, Spaghetti Carbonara, Chocolate Coconut Chia Pudding
Hi everyone,
Happy July 4th! Hope you’re having a wonderful week! I’m back in LA and loving being on the west coast again. First stop back was, of course, our favorite taco spot Tacos Delta. Doug’s company is off this week, so we’ve been mixing in some staycation vibes with trips to the pool and coffee walks in the neighborhood.
Below I’ve answered some questions I got in my DMs last week, including my favorite recipe (it was hard to pick one!), a crowd-pleasing menu for entertaining, my workout routine, and more! Thanks for sending in such great questions. I’m excited to share my answers with you all :)
First, here’s a recipe for my mom’s potato salad. For me it’s the best potato salad, and everybody who tries it absolutely loves it. There’s small red potatoes and a creamy dressing made with an entire bunch of parsley. We hope you love it as much as we do!
What I Cooked Last Week! ↓
Mom’s Potato Salad
This potato salad is truly the best. There’s a crunch from red onion and the creamy sauce is perfectly balanced by lots of parsley and a squeeze of lemon.
You can download the PDF recipe above and watch the video here :)
Chocolate Coconut Chia Pudding
The perfect snack or dessert to keep in the fridge! It tastes like rich chocolate pudding but is actually good for you, packed with fiber, antioxidants, and omega-3s.
Spaghetti Carbonara
My mom and I learned to make the most delicious authentic carbonara in Italy. Made with just 5 simple ingredients, it comes together super quickly.
Ask Me Anything
If you could give yourself a piece of advice back when you first started Maxi’s Kitchen, what would it be?
Don’t be afraid to start sharing and putting things out there. It doesn’t need to be perfect. It took me a year to work up the courage to film and post my first video. (And it looked very different from my content now, lol.) But the only way to improve is by actually doing it.
I’d also tell myself not to ride the rollercoaster so much. Social media can feel like a momentum game, sometimes everything’s going really well and your posts are going viral, and other times, nothing seems to resonate with your audience. Over time, I’ve gotten better at focusing on feeling good about my work and staying connected to the bigger picture.
Why are you in New York? Did you move there?
Doug and I absolutely love New York. We lived there for seven years before moving to Los Angeles. When I first arrived in my early twenties, I remember feeling like life had gone from black and white to technicolor. It’s still my favorite city in the world, and I’ll share more about why in a future newsletter. As you can imagine, it took some time to settle into LA after we moved during the pandemic, but now we really love being there too.
Doug’s company, Safara, is based in New York, and all of his employees live there now, so he needs to be on the east coast pretty often. About a year ago, we decided to get an apartment in Greenpoint and started splitting our time, usually a few months in New York in the spring and fall, and the rest in LA, which is still our home base. My cookbook collaborators and publisher are also New York based, so it’s been helpful for me to spend time there too.
